Slatki plodovi ljeta – Sladoled od jagoda i bijele čokolade & Voćna salata s bourbon vanilin šećerom /Summer and it's gifts – Strawberry White Chocolate Ice cream & Fruit salad with an vanilla twist

Ice cream

Jagode.
Crvene, sočne, senzualne jagode predstavljaju voće ljubavi, a uz koje su nerijetko vezane brojne legende i mitovi. Najpoznatija legenda seže još u doba starog Rima koja priča o smrti junaka Adonisa zbog čije je smrti Venera pustila suze. Kada su suze dotaknule zemlju, nastale su senzualne, ljubavne srcolike jagode. 


Iako su jagode tada bile drugačije od onih koje mi danas poznajemo, više divlji plod, to im svejedno nije umanjilo njihovu ljepotu.
Možete li zamisliti puniji okus od onog kada su vam usta puna sočnih jagoda?
Jagode su jedne od ljetnih sočnih voćkica zbog kojih poželite više vremena provesti u krevetu, a ne u kuhinji, a što su upravo dokazali Francuzi koji jagode smatraju afrodizijakom :)


Sladoled od jagoda i bijele čokolade
(za 1 litru)

     Potrebni sastojci:

·         500 g svježih jagoda

·         500 ml vrhnja za šlag, nezaslađenog
....................................................................................................................................................
·         250 ml punomasnog mlijeka, 3.8% m.m.
....................................................................................................................................................
·         50 g bijele čokolade
....................................................................................................................................................
·         4 žumanjka
....................................................................................................................................................
·         180 g kristal šećera
....................................................................................................................................................
·         1 žličica arome vanilije
....................................................................................................................................................
·         1 žličica arome jagode
....................................................................................................................................................
·         1 žlica soka od limuna, svježe iscijeđenog
....................................................................................................................................................


      Priprema:

·         Jagode operite pod mlazom hladne vode pa im očistite peteljke.

·         Odvojite 1/3 od ukupne količine jagoda pa ih nasjeckajte na sitne kockice. Pospite s 1 žlicom šećera, aromom vanilije i sokom limuna. Ostavite u hladnjaku najmanje 1 sat.

·         Ostatak jagoda izmiksajte u blenderu u sitni pire. Ostavite sa strane.
...................................................................................................................................................
·         Žumanjke pomiješajte s 60 g kristal šećera pa miksajte dok se sav šećer ne umiksa.

·         U većoj tećici zagrijte mlijeko, vrhnje i ostatak šećera. Skinite s vatre prije nego zavrije.

·         Polagano ulijte vruće mlijeko u žumanjke stalno miješajući, a potom žumanjke zajedno s mlijekom vratite u tećicu pa stavite na vatru. Kuhajte stalno miješajući na srednje jakoj vatri dok se smjesa ne zgusne, oko 5 minuta. Skinite s vatre kada smjesa zavrije, pazeći da se žumanjci ne prekuhaju.

·         Kada ste smjesu skinili s vatre, dodajte bijelu čokoladu pa miješajte dok se čokolada ne otopi.

·         Smjesu ulijte u posudu u kojoj ćete zamrznuti sladoled. Smjesu potpuno ohladite na sobnoj temperaturi, a potom ulijte pire od jagoda. Dobro promiješajte.

·         Zamrznite nekoliko sati, najmanje 3 sata, a potom dodajte sjeckane jagode iz hladnjaka. Dobro ih umiješajte u sladoled. Vratite sladoled u zamrzivač na još par sati, ponovno izvadite, dodajte aromu jagode i laganim pokretima je umiješajte da se stvore šare po sladoledu, pa vratite u zamrzivač. Ostavite sladoled neka se zamrzava oko 24 sata, pritom najmanje 8 puta sladoled izmiješajte u toku zamrzavanja kako biste izbjegli kristaliće leda na sladoledu (naravno, ako nemate aparat za sladoled).

Voćna salata s bourbon vanilin šećerom i ekstraktom naranče
(za 2 osobe)

      Potrebni sastojci:

·         120 g svježih jagoda

·         90 g svježih malina
....................................................................................................................................................
·         60 g trešanja
....................................................................................................................................................
·         20 g bourbon vanilija šećera
....................................................................................................................................................
·         ¼ žličice arome vanilije
....................................................................................................................................................
·         4 kapi ekstrakta naranče (ili ruma)
....................................................................................................................................................
·         svježi listići mente
....................................................................................................................................................
·         po želji možete dodati i: mango, grožđe, ananas, borovnice, marelice, nektarine...
....................................................................................................................................................


      Priprema:

·         Voće operite pod mlazom hladne vode.

·         Trešnjama očistite peteljke i koštice, a jagode prepolovite.
...................................................................................................................................................
·         Voće stavite u manju zdjelu, dodajte vanilin šećer i dobro promiješajte. Dodajte arome vanilije i naranče pa promiješajte da se svi sastojci dobro spoje, ali budite pažljivi da vam se voće ne zgniječi. Na kraju dodajte listiće mente.

·         Ostavite u hladnjaku najmanje 1 sat. Poslužite ohlađeno.

Strawberries.
Red, juicy strawberries are the fruit of sensual love, and they are often associated to numerous legends and myths.
The most famous legend dates back to the Roman times, which tells of the death of the hero Adonis, whose death cried Venus, goddes of love. When her  tears touched the Earth, they made sensual, romantic heart-shaped strawberries. 
Although the strawberries  were different from those we know today, almost wild berries, 
they still did not lost their beauty.


Strawberry White chocolate Ice cream
(makes 4 cups (1000 ml))

     You need:

·         1 pound (500 g) fresh strawberries

·         500 ml whipping cream

·         250 ml whole fat milk
....................................................................................................................................................
·         50 g white chocolate
....................................................................................................................................................
·         4 egg yolks
....................................................................................................................................................
·         180 g granulated sugar
....................................................................................................................................................
·         1 tsp vanilla essence
....................................................................................................................................................
·         1 tsp strawberry essence
....................................................................................................................................................
·         1 tbsp lemon juice, freshly squeezed
....................................................................................................................................................


      Steps:

·         Wash the strawberries and clean the stalks.

·         Chop finely 1/3 amount of the strawberries, combine with vanilla essence, lemon juice and 1 tbsp granulated sugar. Leave in the refregerator for at least 1 hour.

·         Put the rest of the strawberries in a blender and mix well into puree. Leave aside.

·         Combine egg yolks with ¼ cup (60 g) of the sugar and mix well for 1 minute.

·         Warm the milk, whipping cream and the rest of the sugar.

·         Slowly pour the warm milk into the egg yolks, whisking constantly. Scrape the egg yolks back in the saucepan. Cook the mixture over medium heat, constantly whisking, until the mixture thickens, for about 5 mins (be careful not to boiled the yolks).

·         Remove from the heat and add white chocolate. Stirr until chocolate is completely melted.

·         Pour the mixture into a plastic container. Let completely cool on the room temperature, then add pureed strawberries.

·         Freeze for a couple of hours, 2-3 hours at least. In this point, add chopped strawberries and mix well. Freeze again for a couple of hours then take it out and whip again, add 1 tsp strawberry essence (if you like strawberry swirl on the ice cream). Freeze again for a couple of hours and whip it again...  Let the ice cream freeze for 24 hours and in the meantime whip it at least 8 times during the freezing process.

·         Serve cold.

Fruit salad with an vanilla twist

(serves 2)



     You need:

·         120 g fresh strawberries

·         90 g fresh raspberries
....................................................................................................................................................
·         60 g fresh cherries
....................................................................................................................................................
·         20 g bourbon vanilla sugar
....................................................................................................................................................
·         ¼ tsp vanilla essence
....................................................................................................................................................
·         4 drops orange essence (or rum)
....................................................................................................................................................
·         fresh mint leaves
....................................................................................................................................................
·         you can also add: mango, grapes, pineapple, blueberries, apricots, nectarines (optional)
....................................................................................................................................................


      Steps:

·         Wash the fruits. Clean the pits from cherries, cut strawberries in half.

·         Put all the fruits (on your choice ) in a salad bowl. Add vanilla sugar, vanilla essence and orange essence. Toss well to combine. Add fresh mint leaves in the end.

·         Refregerate for at least 1 hour, serve cold.

  1. Muški pisci su ranije znali putenost žene magično porediti sa voćem, a ti si me opet prisetila na silnu ljubavnu poeziju koju sam čitala i skupljala u srednjoj školi. Kombinacija bele čokolade i voća je magična! Trenutno sam u fazi zdravih miksalica od par zaleđenih jagoda, kupina, sveže banane i jabuke, meda i jogurta, pa to sve skupa liči na neku bednu imitaciju sladoleda, ali rado bi se menjala za ovaj tvoj!

  2. divota. baš volim ovakve salatice i sladolede. Ovaj vanilin bourbon šećer i ja često koristi, više i ne kupujem onaj klasični, kad ga stavljam, a gotovo i da ne kupujem mahune vanilije, samo posežem za ovim šećerom :)

  4. Kod tebe na stolu prava letnja simfonija ukusa i boja, svidja mi se sladoled jer nisam ranije kombinovala voce i cokoladu u istom receptu, jagodice su vec prosle ali mozda bih mogla da napravim sa malinama... i vocna salata mirise na leto i mami da se proba;))

    @ Jelena, pjesnička duša :) I ja sam u osnovnoj i srednjoj skupljala poeziju, još imam ručno ispisane stranice pustih bilježnica koje sam neumorno prepisivala još dok nije uslijedila era kompjuterizacije :)
    @ Tamara, također! Mahune vanilije su mi preskupe, ali zato ovaj šećer daje takvu punoću okusa da ga stavljam u sve šta stignem! Zamisli damo da još imamo kupiti u RH pravi Bourbon vanilin prah :)
    @ Lana, u ovaj sladoled sam stavila jaja zbog bijele čokolade, mada sve voćne sladolede kao osnovicu radim bez jaja. Tu kod nas još ima jagoda, stalno se obnavljaju i biti će ih cijelo ljeto :)

  6. Ja kada imam ovako sezonsko mirisljavo voce,ja se tusim jeduci ga..moram priznati da mi sladoled ne pada na pamet ni jesti ni praviti,uzivam u vocu..e sada kada gledam kako ste vi sve pocela sa sladolima da se sladite,dode i meni zelja,ali nema mirisljavog voca !!!:)

  7. Koje prekrasne boje, čisti užitak za oči Majo! Sladoled obavezno isprobavam, mada sumnjam da će mi se "dati" miješati 8 puta... :) Krajnje je vrijeme za nabavku aparata za sladoled!;) A voćna salata sa sezonskim voćem, nema ništa ljepše. Dodatak bourbon vanilin šećera i ekstrakta naranči mu daje posebnu notu. Divno!

  9. Sjajan sladoled!!! Šteta pa su naše domaće jagode na izmaku... Ima još samo pokoji plod... Ali možda bi bila fina kombinacija sa malinama? Za probati...

  10. Iako nisam preveliki ljubitelj bijele čokolade ovaj sladoled mi izgleda tako ukusno i fino da ga nikako ne bih odbila. A ne bih odbila niti voćnu salatu , prekrasno izgleda, slika sa cvjetićima je posebno lijepa !
