Jutros mi je suprug za doručkom rekao da sam cijelo
vrijeme u snu spominjala čokoladu.
Izgleda da sam sanjala nešto čokoladno i od same pomisli
na čokoladu želudac me zabolio.
Bila sam željnja muffina – čokoladnih s daškom kiselog
voća. S malinama.
Dok je suprug čačkao po internetu, ja sam se vrtila po
kuhinji. Bilo bi šteta da ne iskoristim košarice za muffine koje mi je naručio
preko interneta, a odsustvo pećnice zbog kvara na grijačima do prije nekoliko
dana uzelo je svoj danak. Udavila bi se u muffinima-upravo sada!
No sami muffini nisu mi bili dovoljno čokoladni (trebala
mi je tada tona čokolade!), morala sam ih premazati i od njih napraviti slatke
Cupcakes, a mislila sam ih poslužiti iza ručka, kao desert vodeći se za onim
„šećer na kraju“.
Možeš mislit što su dočekali „za desert poslije ručka“ , jedno otvaranje
vrata hladnjaka učinilo je da većina Cupcakesa nestane prije nego je suprug
povirio u kuhinju kako bi se borio oko dva zadnja komada :)
Možete ih jesti i bez čokoladne kreme, onako vruće –
suprug kaže da su mu tako najbolji :)
Potrebni sastojci:
Za Cupcakes (za 7 komada):
160 g tamne čokolade za kuhanje sa 46 % kakaa (Dorina)
100 g maslaca
100 g kristal šećera
3 cijela jaja
40 g glatkog pšeničnog brašna
20ak komada svježih (ili zamrznutih) malina + 2 žlice kristal
šećera
Za kremu:
100 g tamne čokolade sa 70% kakaa
90 g maslaca
50 ml vrućeg mlijeka
100 g margarina za kreme
Priprema:
Maline izvadite iz zamrzivača, pa ih otopite na sobnoj
temperaturi. Pospite s dvije žlice kristal šećera.
Čokoladu nalomite, a maslac narežite na manje kocke. Sve
zajedno stavite u lončić pa rastopite na pari.
U čokoladu umiješajte šećer, jedno po jedno cijelo jaje
stalno miješajući silikonskom špatulom, nikako ne mikserom. Na kraju dodajte
brašno. Smjesu dobro promiješajte (ne miksajte!) kako bi se svi sastojci spojili.
Košarice za Cupcakes ili muffine premažite s malo
rastopljenog maslaca, a zatim ulijte pripremljenu smjesu do 3/4 kalupa.
U svaki Cupcakes utisnite po 3 maline, pa vrh Cupcakesa
zagladite silikonskom špatulom.
Pecite na 200°C oko 10 minuta.
Pečene Cupcakes izvadite iz pećnice i ohladite na sobnoj
temperaturi.
U međuvremenu pripremite kremu za Cupcakes: tamnu čokoladu rastopite s maslacem na pari pa
pomiješajte s vrućim mlijekom. Kremu ostavite u hladnjaku par sati da se dobro
stvrdne, a zatim ju dobro promiješajte s margarinom.
Ohlađenu kremu premažite silikonskom špatulom preko
Cupcakesa pa poslužite.

Chocolate Cupcakes with raspberries
This morning my husband said to me that all
the time in the dream I was screeaming for a chocolate!
I wanted muffins so bad – chocolate one with a hint of sour fruit. With raspberries.
While my husband was on the Internet, I was spinning in the kitchen. It would be a shame not to take this muffin molds, which my husband ordered me on line, and the absence of broken oven until a few days took its toll. I would be drowned in the muffins-right now!
Muffins alone are not enough for me, so I wanted to make a Cupcakes with a lots of cream on it.

So, I thought served them after lunch, as dessert.
Unfortunately, one opening the door of refrigerator made the most Cupcakes disappeared before my husband came into the kitchen to fought over the last two pieces.
You can also eat them without chocolate
cream while they are still hot (my husband preferes this ones).
You need (for 7 Cupcakes):
160 g dark chocolate, 46%
cocoa
100 g butter
100 g granulated sugar
3 whole eggs
40 g plain flour
20 pieces fresh (or frozen) raspberries + 2 Tbsp. granulated sugar
For the Cupcakes cream:
100 g dark chocolate, 70% cocoa
90 g butter
50 ml hot milk
100 g butter
100 g granulated sugar
3 whole eggs
40 g plain flour
20 pieces fresh (or frozen) raspberries + 2 Tbsp. granulated sugar
For the Cupcakes cream:
100 g dark chocolate, 70% cocoa
90 g butter
50 ml hot milk
100 g margarine for cream (or butter)
Steps:
Defrost the fruit at room temperature. Sprinkle with two tablespoons of granulated sugar. Set aside.
Combine choped chocolate and butter and put it into a bowl. Melt over a pot of simmering water.
Stir sugar into melted chocolate, add one by one whole egg stirring constantly with a silicone spatula, not mixer. Finally, add flour. Combine.
Brush Cupcakes molds with melted butter, then pour the prepared mixture to 3/4 of the mold.
In each Cupcakes press 3 raspberries, and smooth the top of Cupcakes with silicone spatula.
Bake at 400 F (200°C) for 10 minutes.
Baked muffins remove from oven and cool on room temperature.
In the meantime, prepare the cream for Cupcakes: melt dark chocolate with butter over a pot of simmering water and mix with hot milk. Leave the cream in the refrigerator a couple of hours to get a good cure, then mix it well with margarine.
Top the cupcakes with cream and serve chilled.

ReplyDeleteStalno koristim jedan recept za muffine (otkada sam ga pronašla, ne puštam ga!), takod a su ovo zapravo samo varijacije (lješnjaci, suho voće, maline, višnje...) :)
