Potrebni sastojci (za 2 osobe):
Za tjesteninu:
300 g brašna od durum pšenice
3 cijela jaja
4 žlice maslinovog ulja
1 žličica soli
2 žlice soka od cikle
Za umak:
4 režnja češnjaka
1 žlica peršina
1 žlica maslinovog ulja
brašno
mlijeko
Ostalo:
3 veća batata
rezanci od špinata
Priprema:
Brašno pomiješajte s soli, maslinovim uljem i sokom od
cikle pa dodajte 3 cijela jaja.
Dobro umijesite tvrdo tijesto, zamotajte ga u prozirnu
foliju pa ostavite u hladnjaku 30 minuta.
U međuvremenu pripremite umak: na 1 žlici maslinovog ulja
kratko popržite češnjak, dodajte malo brašna, dodajte malo mlijeka pa dobro
promiješajte pazeći da ne zagori. Skinite s vatre pa dodajte peršin i po
potrebi još maslinovog ulja.
Tijesto za tjesteninu razvaljajte na tanko na
pobrašnjenoj radnoj podlozi pa režite na rezance ili izrežite cvjetiće pomoću
kalupa za kolače (moji cvjetići su dobili rupice na sebi jer su mi se malo
zalijepili tijekom kuhanja pa ih nisam mogla odvojiti, no na kraju je to ispalo
još bolje!).
Tijesteninu dobro nabrašnite da vam se ne zalijepi pa je
stavite kuhati u kipuću slanu vodu. Kuhajte dok ne omekša (oko 10 minuta).
Batate narežite na kockice, prelijte maslinovim uljem pa
popržite na grill tavi dok ne uhvate koricu.
Kuhanu domaću tjesteninu pomiješajte s kuhanim rezancima
od špinata, dodajte umak od češnjaka i batate. Promiješajte pa poslužite toplo.

Homemade pasta with roasted sweet
potatoes in garlic and parsley sauce
You need (serves 2):
For the pasta:
300 g durum (whole wheat) flour

4 Tbsp. olive oil
1 Tsp. salt
2 Tbsp. beetroot juice
For the sauce:
4 cloves garlic
1 Tbsp. parsley
1 Tbsp. olive oil

milk
You also need:
3 larger sweet potato
300 g durum (whole wheat) flour
3 whole eggs
4 Tbsp. olive oil
1 Tsp. salt
2 Tbsp. beetroot juice
For the sauce:
4 cloves garlic
1 Tbsp. parsley
1 Tbsp. olive oil
flour
milk
You also need:
3 larger sweet potato
spinach noodles
Steps:
Prepare home made pasta: mix
flour with salt, olive oil and beetroot juice and add 3
whole eggs.
Make a hard dough, wrap it in plastic bag and let rest in fridge for 30 minutes.
In the meantime, prepare the garlic sauce: on 1 Tbsp. of olive oil briefly fry garlic, add a little flour, add a little milk and stir well making sure not to overburn. Remove from heat, add parsley and more olive oil if needed.
Roll the pasta dough thinly on the floured kitchen surface and cut into strips (noodles) or cut flowers using molds for cookies (my flowers get nice holes in it because I let hem overcooked so they sticked, but in the end it turned out more better!).
Pour lots of flour on pasta and cook in boiling salted water.
