Ovo je jedan od uobičajenih bakinih recepata za prhke keksiće kojemu sam
dodala bademe (mljevene i krupno sjeckane), margarin zamijenila maslacem,
smanjila količinu jaja i šećera i dobila savršene keksiće koji podsjećaju na
Američke (chewy) chip cookies.
Mi ih obožavamo, a sutradan su
božanstveno mekani, ukoliko ih čuvate u limenoj ili Tupperware kutijicama na
sobnoj temperaturi. Mogu trajati do tri dana (mogu oni stajati i duže, ali zbog
jaja ne preferiram).
Obavezno poslužiti uz čašu mlijeka!
Keksići
od badema
(za
20-ak keksića)
Potrebni sastojci:
Za keksiće:
· 60 g mljevenih badema

· 60 g grubo sjeckanih badema
....................................................................................................................................................
· 180 g glatkog pšeničnog brašna
....................................................................................................................................................
· 60 g maslaca, sobne temperature
....................................................................................................................................................
· 5 žlica kristal šećera
....................................................................................................................................................
· 1 cijelo jaje
....................................................................................................................................................
· 1 žličica arome vanilije
....................................................................................................................................................
· 1/2 žličice sode bikarbone
....................................................................................................................................................
· prstohvat soli
....................................................................................................................................................
Za bademe:
· 20-ak komada cijelih badema
....................................................................................................................................................
· 120 ml vruće vode
....................................................................................................................................................
· šećer u prahu za posipanje
....................................................................................................................................................
Priprema:
·
Pećnicu zagrijte na 170°C.

·
Tepsiju za pečenje kolača
premažite s malo maslaca te pobrašnite u tankom sloju.

Cijele bademe (20-ak komada)
stavite u manju zdjelu pa prelijte s 2 dl kipuće vode. Ostavite da odstoje
najmanje 5 minuta. Nakon što su bademi odstajali, izvadite ih iz kipuće vode,
skinite im kožicu, a vodu prolijte. Oguljene bademe pobrišite suhom kuhinjskom
krpom. Ostaviti sa strane.

U zdjeli, brašno pomiješati s šećerom,
soli, sodom bikarbonom, mljevenim te krupno sjeckanim bademima.

Brašnu dodati jaje, aromu vanilije
te maslac narezan na listiće.

Sve sastojke dobro promiješati pa
zamijesiti glatko tijesto. Nemojte dodavati previše brašna čak i ako vam se
tijesto malkice lijepi za ruke, jer će vam kasnije keksići biti tvrđi.

Tijesto razvaljajte u valjčić
debljine 2 cm, a potom narežite na komadiće 2x2 cm.

Svaki komadić tijesta oblikujte u
kuglicu veličine oraha, pa ju dlanom pritisnite/spljoštite prema radnoj površini.

Spljoštene keksiće tupim nožem
podignite od radne ploče pa ih premjestite u tepsiju, vodeći računa da su
najmanje 2 cm udaljeni jedan od drugih. U sredinu svakog keksića utisnite
oguljeni badem.

Pecite na istoj temperaturi na
kojoj ste zagrijali pećnicu, oko 10-12 minuta (pazeći da ne požute).

Pečene keksiće izvadite iz
tepsije, ostavite 2 minute da se ohlade na sobnoj temperaturi, a potom iz
izvadite ih tepsije.

Prije posluživanja možete ih
posuti šećerom u prahu ili zatvoriti u limenu kutijicu za kasniju uporabu.

This is usual grandma's recipe for crispy
cookies, which I added some almonds (ground and roughly chopped), margarine replaced with butter, reduce the amount of eggs and sugar,
so I got a perfect cookies which remind me of American (chewy) chip cookies.
We adore them, and the next day they are heavenly soft, if kept in tin or
Tupperware boxes at room temperature. Can last up to three days (they
can stand up longer, but because eggs I do not prefer).
Be sure to serve with a glass of milk!
Almond cookies
(makes 20 cookies)
You need:
For cookies:

60 g almond meal

60 g coarsely chopped
almonds

180 g cake flour

·
60 g butter, room
temperature
....................................................................................................................................................

5 tablespoon granulated sugar
....................................................................................................................................................

1 egg
....................................................................................................................................................
·
1 teaspoon vanilla extract
....................................................................................................................................................
·
1/2 teaspoon baking soda
....................................................................................................................................................
·
pinch of salt
....................................................................................................................................................
For almonds:
·
20 pieces whole almonds

·
120 ml boiling water
....................................................................................................................................................
·
confectioner's sugar, for
sprinkling
....................................................................................................................................................
Steps:
·
Preheat your oven to 340
F (170°C).

Brush baking pan with a
little butter and sprinkle with flour in a thin layer.
....................................................................................................................................................

Put in a small bowl whole almonds (20
pieces), cover with 1 cup boiling water. Allow to sit for at
least 5 minutes. Remove almonds from water, peel their skin.
Leave aside.

In a bowl, mix flour with sugar, salt, baking
soda, almond meal and roughly chopped almonds.

Add whole egg, vanilla
extract and cutted butter on thin slices.

Mix all ingredients. Do
not add too much flour, even if the dough sticks
to your hands a little bit, it'll makes cookies stiffer.

Roll the dough into the roller
1-inch (2 cm) thick, then cut into 1''x1'' (2x2 cm) size pieces.

Each piece of dough press/flatten
with your palm to the kitchen surface.

·
Lift cookies from the kitchen
surface using blunt knife, move them into prepared baking pan, making sure they
are at least 1-inch (2 cm) from each other.

Put into center of each cookie
peel almond.

·
Bake into the same temperature,
10-12 minutes (do not alow to capture golden colour).

Let alow to cool 1-2 mins before
removing from bakin pan.

Store them into tin box for latter
use or serve them sprinkle with confectioner's sugar.

Oduševljena sam kako dobro slikaš kekse. Ja sam se pre neki dan sita namučila da aranžiram kekse i jedva sam nešto od slika izvukla. Tako fino deluju, prefinjeno. Mislim da bi ih slobodno mogla i raditi bez jaja i tada bi trajali jako dugo, a i to jaje ne smeta mogu oni da stoje slobodno.

ReplyDeleteŠto se tiče jaja, mogu oni i bez mada je meni ljepši okus kada ide barem jedno jaje. Probala sam povećati (mrvicu) količinu maslaca ili pak dodati hladnu vodu umijesto jaja. Bili su ok, ali nisu zadovoljili moje nepce :)
Nekako me oduvijek bilo strah jaja, uvijek su me jaja i vrućine asocirale na bolnicu pa ih strogo izbjegavam koristiti dulje od tri dana.
Inače, ove keksiće (kao i sve prhke keksiće) obožavam jer imaju pravilo - Što duže stoje to su sve bolji/mekši :)
Moram primjetiti da su mi tvoje fotke sve ljepše i ljeoše, jako si lijepo ovo složila, kao što kaže Jelena

ReplyDeleteodlični keksići, napravila si dobre izmjene bakinog recepta i vjerujem da su keksići savršeni. Badem inače jako volim i keksiće bilježim. Divno izgledaju !!
ReplyDeleteJa se stvarno ne mogu nadiviti tvojim slikama, a vidim da i ostali dijele moje mišljenje.. To jednostavno izgleda tako divno da ja kad bi to imala ispred sebe ne bi htjela ni taknuti, da ne bi uništili tako lijepi aranžman :)
