Zapečene tikvice s graškom i bobom & Krekeri od sira/Courgettes, peas and broad beans Gratin & some Cheese Crackers

Cijelu zimu čeznem za proljećem i laganijom, zdravijom hranom koju nam priroda daje. 
Mada nije sezona tikvica, ja ih obožavam, a ovog puta sam uobičajeno jelo koje se godinama služi na našem stolu začinila s malo prošlogodišnjeg boba kojeg sam pronašla u zamrzivaču, te graška. 
Možete ubaciti i neki drugi sir, primjerice Cheddar ili Parmezan. Ja sam namjerno išla na laganiju varijantu topljivog sira kako bih sačuvala okus tikvica, boba i graška jer nisam htjela da mi okus sira prevlada.
Možete ga poslužiti kao prilog, ali sasvim je izdašno i zasitno da bude glavno jelo.


Zapečene tikvice s graškom i bobom 
(za 2 osobe, kalup od cca. 20 cm)

      Potrebni sastojci:

·         3 tikvice srednje veličine

·         120 g mladog boba

·         60 g graška
...................................................................................................................................................
·         120 g pizza sira (Gouda), naribanog
...................................................................................................................................................
·         5 žlica maslinovog ulja, domaćeg
...................................................................................................................................................
·         1 cijelo jaje, lagano razmućeno
...................................................................................................................................................
·         2 režnja češnjaka
...................................................................................................................................................
·         3 žlice krušnih mrvica (prezlo)
...................................................................................................................................................
·         1 žličica soli
...................................................................................................................................................
·         1/2 žličice crnog papra, mljevenog
...................................................................................................................................................
·         1 grančica timijana, po želji
...................................................................................................................................................


      Priprema:

·         Operite, ogulite i naribajte tikvice na najsitnijim rupicama na ribežu. Pospite s soli pa ostavite da odstoje 10 minuta kako bi pustile vodu. Nakon 10 minuta tikvice ocijedite od vode lagano ih stiskajući rukama. Ostavite sa strane.

·         Bob i grašak stavite u manji lončić s vodom pa kuhajte na jakoj vatri 10 minuta dok povrć lagano ne omekša. Ocijedite povrće od vode u kojoj se kuhalo pa ostavite sa strane.

·         Pomiješajte tikvice s bobom i graškom, polovicom naribanog sira, maslinovim uljem, sitno naribanim češnjakom, paprom, timijanom te jajem. Sve sastojke dobro promiješajte pa na kraju dodajte krušne mrvice. Opet dobro promiješajte.

·         Zagrijte pećnicu na 180°C.

·         Lagano nauljite kalup (keramički ili glineni) za pečenje.

·         Pripremljenu smjesu premjestite u nauljeni kalup, žlicom zagladite površinu smjese pa pospite s ostatkom sira po vrhu.

·         Pecite 35-45 minuta, ovisno o pećnici (ili dok se na vrhu ne uhvati lagana zlatno-smeđa korica).

·         Pečene tikvice ostavite da odstoje 5 minuta prije serviranja.

·         Servirajte s krekerima od sira.

Krekeri od sira
(za 15 komada, ovisno o kalupima)

      Potrebni sastojci:

·         240 g integralnog ili crnog brašna (ja sam koristila crno brašno)

·         80 g pizza sira (Gouda), naribanog
...................................................................................................................................................
·         2 žlice maslinovog ulja
...................................................................................................................................................
·         1 žličica praška za pecivo
...................................................................................................................................................
·         1/2 žličice soli
...................................................................................................................................................
·         60 ml hladne vode
...................................................................................................................................................
·         1 žlica sjemenki lana, za posipanje
...................................................................................................................................................


      Priprema:

·         Zagrijte pećnicu na 180°C.

·         U manjoj zdjeli pomiješajte brašno, sol i prašak za pecivo.

·         Dodajte sir pa lagano promiješajte, a potom dodajte ulje i vodu. Sve sastojke ručno umijesite. Ako je potrebno, dodajte još malo vode. Tijesto treba biti kao tijesto za pizzu ili kruh.

·         Istresite tijesto na lagano pobrašnjenu radnu podlogu pa miojesite tijesto oko 5 minuta.

·         Tijesto razvaljajte na debljinu oko 5mm, a potom izrežite oblike po želji.

·         Krekere premažite hladnom vodom pa pospite sjemenkama maka.

·         Premjestite krekere na tepsiju za pečenje obloženu papirom za pečenje.
....................................................................................................................................................
·         Pecite 10-15 minuta, dok ne uhvate zlatno-smeđu boju.

Courgettes, peas and broad beans Gratin
(serves 2, for 8-inch baking dish)

      You need:

·         3 courgettes medium size

·         120 g broad beans

·         60 g green peas
...................................................................................................................................................
·         120 g pizza cheese, grated
...................................................................................................................................................
·         5 tablespoons Olive oil
...................................................................................................................................................
·         1 whole egg
...................................................................................................................................................
·         2 cloves garlic
...................................................................................................................................................
·         3 tablespoons bread crumbs
...................................................................................................................................................
·         1 teaspoon sea salt
...................................................................................................................................................
·         1/2 teaspoon black pepper
...................................................................................................................................................
·         1 spring thyme (optional)
...................................................................................................................................................


      Steps:

·         Wash, peel and finely grate courgetes. Sprinkle with salt and leave aside for 10 minutes. After 10 mins, drain the water from the courgettes.

·         Put broad beans and peas in a small pot with water. Cook on the high heat for 10 mins.
After 10 mins, drain the vegetables from the water, set aside.

·         Combine courgettes with broad beans, green peas, 1/4 cup (60 g) grated cheese, olive oil, grated garlic, pepper, thyme, and lightly beaten egg. In the end, add some bread crumbs. Stir until all ingredients are not connected.

·         Preheat your oven at 350 F (180°C) and position a rack in the center.

·         Oil an 8-inch (20 cm) square baking dish.

·         Transfere the mixture to the baking dish. Smooth the top. Add the remaining cheese to the top.

·         Bake 35-45 mins, or until the top is golden.

·         Let the dish rest for 5 mins before serving.

·         Serve with cheese crackers.

Cheese crackers
(makes 15 pieces)

      You need:

·         240 g whole-grain wheat flour

·         80 g pizza cheese, grated (or cheddar cheese)

·         2 tablespoons olive oil
...................................................................................................................................................
·         1 teaspoon baking powder
...................................................................................................................................................
·         ½ teaspoon sea salt
...................................................................................................................................................
·         60 ml cold water
...................................................................................................................................................
·         1 tablespoon flax seeds, for sprinkling
...................................................................................................................................................


      Steps:

·         Preheat your oven at 350 F (180°C).

·         In the bowl, combine flour, salt and baking soda.
...................................................................................................................................................
·         Add grated cheese, oil and water. Mix until all ingredients are connected. Add more flour if neccesary.

·         On a lightly floured surface knead a stiffer dough (as for bread) for about 5 mins.

·         Roll out the dough and cut it into flower (rectangle, square, circle) shape.

·         Brush crackers with water and sprinkle with seeds.

·         Transfere the crackers on baking pan covered with baking sheet.

·         Bake 10-15 mins, or until the top is golden.

    Nećeš verovati, ali ovde ljudi ne znaju za bob! Na bobu su ljudi odrasli, generacije i generacije, a onda je nestao. Ja se namučim oko Božića kada spremam posno da nađem sušeni bob i onda se on kuva do u besvest. Pre dve godine sam ga kuvala 2 sata. Na pijaci ga svežeg nisam videla. Kažu mi da kod nas ima na proleće svežeg pasulja. Nikad ga nisam primetila, možda sam mislila da je to suvi pasulj i da se on kao i bob kuva dok si rekao keks. Ja volim letnju i laganu hranu, ali se ježim prolećnih cena voća koje nam stiže. Svako proleće ostanem željna voća, jer kad mu padne cena ono i nestane. Kao da živimo na Himalajima. Maline izvozimo i šakom i kapom, kao i borovnice, a ovde su paprene.
    Dopada mi se glaze ovih keksa. Nikada ih nisam premazivala hladnom vodom. Divan je kontrast gornjeg i donjeg dela!

    Šta se tiče cijena, stvarno nisu normalni, pola toga izvozimo, a uvozimo trećerazredno inozemno koje je duplo skuplje nego domaće... Grozno...
    Cijene voća, povrća i ribe su astronomske...

  3. Fantastično jelo, obožavam ovakvu spizu, bravo! Kod nas ima boba na tržištu ali ja ga nekako rijetko kupujem, nemam naviku. S druge pak strane tikvica uvijek imam u frižideru i volim ih na sve moguće načine :)
    Ovi integralni krekerići su božanstveni

  4. Slike su super!!! Ovdje nema svjezeg boba, ali zato ima zaledjenog (sto je jos svjezije od svjezeg) i cijena je o.k.

  5. Hvala cure! Meni baka sadi bob otkako sam se rodila i uvijek imamo zamrznutog (za zimnicu). Moram priznat da ga dugo nisam vidjela u supermarketima, jedino na pijacama kod bakica :)
    Prije ga nisam volila, no bob je jako zdrav, a budući da se jednim dijelom pokušavam hraniti zdravo, ubacujem ga malo po malo u prehranu da se naviknemo na njega :)

  6. ovo je jako fino i lagano proljetno jelo. Obožavam i tikvice i bob, grašak nešto manje pa bih ga izostavila. Rado ću čim prije isprobati ovaj recept. A krekerići su preslatki i odlično idu uz ovaj lagani ručak .

  7. Za ovakve stvari sam uvijek, mislim da ti i ja imamo totalno sličan ukus što se tiče hrane, ako ne i isti, to je valjda isto činjenica da živimo na moru :)
