Moja lubenica bila je svježa, hrskava i nije puštala puno vode pa sam joj malo pripomogla dodavajući hladnu vodu malo po malo. Nemojte pretjerivati u količinama dodavanja vode jer je moguće da ju lubenica u kuhanju pusti. Količinu šećera možete prilagoditi svojem ukusu, ja osobno ne volim kada su mi zimnice preslatke.

Priprema:

Lubenicu ogulite od kore (možete
skinuti samo zelenu koru i ostaviti bijeli dio jer je i on jestiv, no onda će
džem nešto više kuhati; a možete kao i ja koristiti samo crveni dio lubenice).
Odstranite sve koštice i narežite lubenicu na manje kockice.

Želin pomiješajte s 3 žlice
kristal šećera pa ostavite smejsu sa strane.

U manjem lončiću pomiješajte
lubenicu s vodom i šećerom. Vodite računa da lubenica sadrži puno vode pa nemojte
dodavati previše vode makar vam se učini suhim (ona će kasnije pustiti svoju
vodu). Kuhajte povremeno miješajući oko 30 minuta na laganoj vatri, ili dok
voće ne omekša.

Kada je lubenica omekšala usitnite
ju štapnim mikserom ili pasirkom za pire krumpir.

U međuvremenu, svije manje ili
jednu veću staklenku od oko 500 g sterilizirajte tako da ćete ju oprati,
ocijediti od vode i staviti u hladnu pećnicu. Pećnicu upalite na 120°C pa
staklenku ostavite unutra oko 20 minuta.

Kada je lubenica omekšala i
propasirana, dodajte aromu vanilije i pektin pomiješan s 2 žlice šećera.
Kuhajte stalno miješajući još oko 3 minute, a potom skinite s vatre.

Staklenku izvadite iz pećnice pa
ju stavite na mokru kuhinjsku krpu kako biste izbjegli pucanje stakla dok je
punite. Pripremljeni džem odmah ulijte u staklenku, zatvorite poklopac pa
ostavite da se ohladi na sobnoj temperaturi. Kada se džem potpuno ohladio,
premjestite ga na suho i tamno mjesto. Ovako pripremljeni džem može trajati do
1 godine.

If you are able to buy fresh, juicy
watermelon, then you should definitely make some watermelon jam!
Watermelon jam
(makes 2 cups (500 g) jam)
You need:

3 big slices red watermelon,
peeled and diced

120 ml cold water

4 tbsp granulated sugar, or more

1 tsp vanilla essence

2 tsp (12 g) no sugar powdered
pectin

Steps:

Peel and dice watermelon. Remove pits.

Combine pectin with 2 tbsp of sugar.
Mix well and leave aside.

Combine watermelon pieces with water
and remaining sugar. Bring to boil on a medium heat on the stove, and cook continuously
stirring for about 30 mins, or until the fruits are softened.

Mix softened fruit with hand mixer
until smooth.

In the meantime, sterilize one big
jar by putting it in the cold oven. Heat oven on 250 F (120°C) and leave jar
inside for 20 mins.

Add pectin mixture and vanilla
essence and continuously stirring cook for 3 minutes. Remove from the heat.

Remove jar from the oven and put
on wet kitchen cloth (to avoid cracking glass). Immediately pour cooked jam in
a hot jar and close the lid. Let cool on
the room temperature, then put in a dark place. It can last for 1 year.
